Perfect Brownie

 

I’ll admit it; I have a weakness for brownies.  I love all types of brownies. I prefer them ooey, gooey and chewy but I’ll not discriminate against the fluffy cake-like brownies either.  With or without nuts, makes no difference to me, it’s the chocolate that I’m interested in. 

Over the years I have had the opportunity to experiment with my own recipes.  I like to think that I’m pretty good in the kitchen and unless my family has been lying to appease me I think they enjoy some of my creations, rather recreations, from time to time.

Here is the recipe that I use.  I would say that it is my own creation but the fact is, I found it in my great grandmother’s cookbook.  I had to change a few things around since I wanted to live a little longer than some of her ingredients would allow.  Besides, I wouldn’t even know where to find lard.  Anyway, it’s a very simple recipe with very few ingredients. The one thing I would suggest is use the best quality chocolate you can get your hands on.  The chocolate is the key.

Ingredients and Instructions

  • ¾ cup white sugar
  • ¾ cup brown sugar
  • ¾ cup flour
  • ¾ cup cocoa powder
  • 3 eggs
  • ¾ cup melted butter
  • ¾ cup semi-sweet chocolate chips

In a mixing bowl, combine the sugar, flour, cocoa powder, and melted butter. Next, crack and stir in one egg at a time. Just mix until all the dry ingredients are wet. DO NOT OVER STIR. Stirring too much will make the flour produce gluten and result in a spongy cake rather than a chewy gooey brownie bar.

After all the dry ingredients are wet, mix in the chocolate chips. Now pour the mixture into a parchment lined 8 x 8 pan. (A better way is to use the pan I offer below, the pan in the video above.)

Bake at 325 for 20 to 30 minutes. When you can stick a toothpick in the center and it comes out clean (make sure you didn’t hit a chocolate chip) then it is finished and ready to cool then slice.

That is a cool pan. There is another pan that is shaped like a maze so that every brownie is an edge or corner brownie.

Hi ,

your recipe looks great I will try , ESP the brown sugar. Okey I really

want ur grandmothers recipe with the lard . I bet that is yummy I will

just try one time . I want to live also . But my mom still cooks with

lard and I find lard for her at kroger . Of course I bought the wrong

kind.

Mine leaks batter around the removeable bottom. No gaskets was supplied with the kit, so how does one keep the batter contained in the brownie pan?
